At this point it seems to be best to ignore "stealth" altogether, because what's the point of having it if the only thing you can do is sneak around doing nothing, because doig nothing is the only thing that doesn't send your position to everyone around?

The brigandine pauldrons not being considered Light Armor makes sense, as the wiki says that brigandine armor's classified as plate-mail because of its construction.
So that's gotta be a glitch. If you really want light armor, I'd advise getting a cotehardie; the game classifies it as chainmail, and it's really light. As for your issues finding suitably light arm armor, why not check out plate couters?
They're actually slightly lighter than Cuman vambraces. Plate couters won't work as you know, they are I never bothered with that perk because of how picky it was with armour pieces. It's not very often I dodge anyway.
Master strikes or perfect blocks are better and can be done on the move unlike dodging, where you need to stop moving in order to dodge. I've only seen that perk active when i have no armor on my arms except Hunter's Gloves, and only some Padded Gambeson and maybe a combat Coat on torso, and Padded elsewhere?
